Millionaire Rotissiere Chicken Salad



This was really good. I made it while Mike was gone because it probably wouldn't have been one of his favorites. A chick-dish. Tamari is awesome. Easy to throw together and lots of flavor. I'll make it again.

Recipe: Rachael Ray

3 TBSP vegetable oil
4 scallions, thinly sliced on angle
2 inch piece of ginger, grated
2 large garlic cloves, crushed
1/2 tsp black pepper
1/2 tsp crushed red pepper
grated peel and juice of 1 lime
1/4 cup Tamari (dark soy sauce)
3 TBSP honey
1 rotisserie chicken, skin discarded & meat thinly sliced
4 cups napa cabbage, shredded

In a small saucepan, heat the oil over medium heat. Add the scallions, ginger, garlic, black/red pepper and cook for 1-2 minutes. Whisk in the lime peel and lime juice, then whisk in the Tamari and honey to combine. Turn off heat.

In a large bowl, toss chicken and cabbage with the sauce to combine well.
