Banana Sour Cream Bread



This is my favorite banana bread. Love the sour cream flavor. I've made this numerous times. Always turns out well. Mine always takes about 1 hour and 15 minutes to bake.

Recipe: All Recipes

1/4 cup white sugar
1 teaspoon ground cinnamon
3/4 cup butter
3 cups white sugar
3 eggs
6 very ripe bananas, mashed
1 (16 ounce) container sour cream
2 teaspoons vanilla extract
2 teaspoons ground cinnamon
1/2 teaspoon salt
3 teaspoons baking soda
4 1/2 cups all-purpose flour
1 cup chopped walnuts (optional)


Preheat oven to 300 degrees F (150 degrees C). Grease four 7x3 inch loaf pans. In a small bowl, stir together 1/4 cup white sugar and 1 teaspoon cinnamon. Dust pans lightly with cinnamon and sugar mixture.

In a large bowl, cream butter and 3 cups sugar. Mix in eggs, mashed bananas, sour cream, vanilla and cinnamon. Mix in salt, baking soda and flour. Stir in nuts. Divide into prepared pans.

Bake for 1 hour, until a toothpick inserted in center comes out clean

Easy Cheesy Rolls



Delicious! But dough filled with butter and cheese usually is. This is the best way to make refrigerated biscuits even more fattening than they already are. Who would have thought that was possible?

Recipe: Real Mom Kitchen

1/4 cup butter, melted
2 Tbsp. Parmesan cheese (in a can)
1 Tbsp. dried basil
1/2 tsp garlic powder
1/2 cup cheddar cheese, shredded
1/2 cup mozzarella cheese, shredded
1 pkg. Pillsbury Grands Biscuits

In a bowl, combine melted butter, Parmesan cheese, dried basil, and garlic powder. Mix shredded cheeses in a separate bowl. Remove biscuits from can and separate into individual biscuits. Flatten each biscuit slightly and put some cheese in the center of each biscuit and fold the dough around the cheese to form a ball. Pinch the dough together to seal the cheese inside. Roll each ball of dough in the melted butter mixture and place on a baking sheet. if there is any left over butter mixture, spoon it on top of the rolls on the baking sheet, Bake at 375 for 10-12 minutes until rolls are golden brown. Makes 8 rolls

Pesto Chicken Roll Up



This recipe is pretty good. Simple to put together. Plan some time for the puff pastry to thaw. I will probably make again.

1 package of puff pastry (2 sheets)
pesto sauce (7 oz. container or 1 cup of homemade)
2 cups of baby spinach
2 cups of cooked chicken cut into bite sized pieces
2 cups shredded mozzarella cheese
1/2 cup grated Parmesan cheese, divided
1 tsp garlic salt
1 egg, lightly beaten

Cook chicken in a little bit of oil and season with pepper and garlic salt. Drain and set aside.

Roll out pastry sheets onto a cookies sheet. Divide all ingredients into two and evenly use on both sheets.

Spread Pesto over both sheets. Top with mozzarella, 1/2 of the Parmesan cheese, spinach and chicken. Roll the pastry sheet into itself until it is into the desired shape. Place the seam on the bottom and adjust it on the cookie sheet.
Do this with both rolls.

Brush each roll with the egg and then sprinkle it with the rest of the Parmesan cheese and garlic salt. Make several slits in the top of the roll to vent. Bake at 400 degrees for 15 to 20 minutes or until golden brown. Slice into individual servings.

Pumpkin Chocolate Chip Bread



I've been making this bread for a long time. It always comes out perfect. Very moist, delicious bread.

Recipe: All Recipes

3 cups white sugar
1 (15 oz) can pumpkin puree
1 cup vegetable oil
2/3 cup water
4 eggs
3 ½ cups all-purpose flour
1 TBSP ground cinnamon
1 TBSP ground nutmeg
2 teaspoons baking soda
1 ½ teaspoons salt
1 cup chocolate chips (semi-sweet)
½ cup chopped walnuts (optional)

Preheat oven to 350 degrees. Grease and flour three 9 x 5 loaf pans.

In a large bowl, combine sugar, pumpkin, oil, water and eggs. Beat until smooth. Blend in flour, cinnamon, nutmeg, baking soda and salt. Fold in chocolate chips and nuts. Fill pans ½ to ¾ full.

Bake for 1 hour, or until an inserted knife comes out clean. Cool on wire racks before removing from pan.

Honey Butter




Add 1/2 to 3/4 cup butter to 1/4 cup honey. Butter should be softened. Mix with beaters to get a fluffy consistency. I like to add a few dashes of cinnamon. Perfect for Chocolate Chip Pumpkin Bread.

Herb Pan Biscuits



Recipe: Land O' Lakes

1/3 cup butter
2 1/4 cup all-purpose flour
1/4 cup grated Parmesan cheese
2 Tbsp. chopped fresh herbs
1 Tbsp. sugar
3 1/2 tsp. baking powder
1/2 tsp. salt
1 cup milk

Heat oven to 400 degrees F. Place butter in a 9" square baking dish and place in the oven to melt. Remove pan from oven until ready to use.

Combine dry ingredients in a medium mixing bowl. Make a well in the center and add the milk. Stir until the flour and is just moistened and starts to form a ball. Turn the dough out onto a lightly floured surface and knead ten times.

Roll the dough into a rectangle that is 12" by 4". Cut the dough into twelve 1" strips. Dip each strip into the melted butter in the pan. Arrange the biscuit strips in the pan.

Bake for 20 to 25 minutes, or until golden brown.

Very good and easy to make. I used italian seasoning for the herbs and it was very flavorful. Could use less herbs if you don't like a strong flavor. I will make again.

Another Zucchini Bread



Makes: 1 loaf

Mix together: 1 1/2 c flour
1 t cinnamon
1/2 t baking soda
1/4 t baking powder
1/4 t salt
1/4 t nutmeg

Mix together: 1 c sugar
1 c unpeeled, grated zucchini
1/4 c oil
1 egg
1/4 t lemon peel
1/2 c walnuts or pecans, chopped

Combine both mixtures. Bake at 350 degrees for 55-60 minutes.

This bread is good too. A few little changes from yesterday's recipe.

I love this zester.

Zucchini Bread




















Recipe: All Recipes

3 cups flour
1 tsp. salt
1 tsp. baking soda
1 tsp. baking powder
3 tsp. cinnamon
3 eggs
1 cup vegetable oil
1 cup white sugar
1 cup brown sugar
3 tsp. vanilla extract
2 cups grated zucchini
½- 1 cup chopped walnuts

Grease & flour two 8x4” loaf pans. Preheat oven to 325.

Sift flour, salt, baking powder, soda & cinnamon together in a bowl.

Beat eggs, oil, vanilla & sugars together in a large bowl. Add sifted ingredients to the creamed mixture and beat well. Stir in zucchini and nuts until well combined. Pour batter into prepared pans.

Bake for 40-60 minutes, or until toothpick comes out clean. Cool in pan for 20 minutes. Remove bread from pan & let cool completely before serving.

Delicious! Nothing healthy about it, though. Suggested changes are: whole wheat flour, replace some of the oil with applesauce, add more zucchini, reduce sugar and add flax seed.
