Pepperoni-Olive Panini



Recipe & Picture: Better Homes & Gardens

Really good, easy sandwich. Perfect use for leftover pizza toppings.

Italian bread
mozzarella cheese
1/3 cup sliced pepperoni
1/3 cup sliced olives
bottle of roasted red sweet pepper strips
2 TBSP pizza sauce

Assemble sandwich and cook in panini maker or grill in skillet.

Chicken Caesar Wraps

Recipe: Food & Family Magazine

3 cups shredded romaine lettuce
2 cups chopped cooked chicken
4 slices bacon, cooked & crumbled
1/4 cup grated parmesan cheese
1/4 cup croutons
1/2 cup caesar dressing
4 flour tortillas (8-inch)

Place first 5 ingredients in large bowl. Add dressing; toss lightly. Spoon mixture onto tortillas. Roll up.

Gyro Pita Burgers



This recipe was pretty good. I didn't think a gyro was made from ground beef, but that's what this recipe calls for. I used pita wraps instead of pitas and just cooked the hamburger on the stove rather than grilling it. It does have a unique flavor. I liked it. Mike thought it was too sweet tasting from the yogurt. It was lowfat yogurt, but I think it was kind of tangy tasting.

Recipe: onesassy

16 ounces plain yogurt, divided
1 ounce, dry weight ranch dressing mix
1 stalk cucumber (peeled, seeded, chopped)
1 1/2 lb. ground beef
1/4 cup onion (diced)
6 pieces round pita bread
2 cups lettuce leaves, torn
1 cup diced tomato

In a medium bowl, combine 1 container of plain yogurt with the envelope of ranch dressing mix. Remove half of the mixture to another bowl. Into one of the bowls, add the remaining container of plain yogurt and diced cucumber; mix well. Cover and refrigerate. Preheat grill and lightly oil grate.

Mix the ground beef and 1/4 cup onion into the remaining half of the yogurt mixture. Shape into 6 hamburger patties.

Grill patties on medium heat for 7 mins. on each side, turning once.

Cut off 1/4 end of the pita pockets and fill with torn lettuce, grilled burger, creamy cucumber sauce and diced tomatoes.

Pesto Chicken Roll Up



This recipe is pretty good. Simple to put together. Plan some time for the puff pastry to thaw. I will probably make again.

1 package of puff pastry (2 sheets)
pesto sauce (7 oz. container or 1 cup of homemade)
2 cups of baby spinach
2 cups of cooked chicken cut into bite sized pieces
2 cups shredded mozzarella cheese
1/2 cup grated Parmesan cheese, divided
1 tsp garlic salt
1 egg, lightly beaten

Cook chicken in a little bit of oil and season with pepper and garlic salt. Drain and set aside.

Roll out pastry sheets onto a cookies sheet. Divide all ingredients into two and evenly use on both sheets.

Spread Pesto over both sheets. Top with mozzarella, 1/2 of the Parmesan cheese, spinach and chicken. Roll the pastry sheet into itself until it is into the desired shape. Place the seam on the bottom and adjust it on the cookie sheet.
Do this with both rolls.

Brush each roll with the egg and then sprinkle it with the rest of the Parmesan cheese and garlic salt. Make several slits in the top of the roll to vent. Bake at 400 degrees for 15 to 20 minutes or until golden brown. Slice into individual servings.

Ross Becker's Ultimate Golf Course Tuna Sandwich



This sandwich was really good. It has a lot of flavor. Way better than boring plain tuna. I agree with Ross -- everybody should make their tuna this way.

Recipe: ABC 4

1 can of tuna in spring water
1 half cup of chopped green onions
1 half cup of chopped carrots
1 half cup of shredded sharp cheddar cheese
1 teaspoon of fresh dill
1 teaspoon of fresh basil, chopped
Salt, pepper, garlic salt
2 tablespoons of mayo or salad dressing
juice of one half lemon

Drain the tuna and using a fork flake the tuna into a mixing bowl. Make sure you don’t have any large pieces. Add the onions, carrots and cheese and combine the ingredients. Add the fresh dill and basil

Add one tablespoon of the mayo and mix with the other ingredients. After they are combined, add salt, pepper and garlic salt to taste and then add the final tablespoon of mayo and continue mixing the tuna with the other ingredients.

Squeeze the lemon into the tuna and mix again.

Toast sourdough bread. Butter the bread lightly and spoon a tennis ball size portion of the tuna on the bread. Cut and serve with a dill pickle.

Fish Tacos



Very good. We both loved them. I used halibut and it worked perfectly. The sauce was really good. I only used the taco seasoning in the sauce. For the fish, I just used lemon juice, olive oil and seasoning salt. Will make again.

Recipe: Pinching Your Pennies

1/2 cup sour cream
1/2 cup mayonnaise
1/4 cup chopped fresh cilantro
1 package Taco Seasoning Mix, divided
1-2 lb fish fillets, cut into 1-inch pieces
2 TBSP oil
2 TBSP lemon juice
1 package Taco Shells, hard or soft

Combine sour cream, mayo, cilantro and half of the taco seasoning for the taco sauce.
Combine oil, lemon juice and rest of taco seasoning and mix with fish. Saute until fish is done – only about 4 minutes.
Fill shells with fish and whatever other topping you want (shredded cabbage or lettuce, tomatoes, taco sauce, etc.)

Turkey Panini




I got a panini maker around Christmas time, and I've had it hidden away. I thought it was about time to get it out and start using it. This sandwich was really good.

I used marble rye and spread some thousand island dressing on one piece of bread. Then put a slice of provolone cheese and turkey. Then, a thin layer of margarine on the outside of the bread and put it in the panini maker. It took a few minutes to get melty and hot. Mike ate it too. If you wanted to make it a Reuben, you could add sauerkraut.

Turkey Burgers with Garlic Mayo



Recipe: Eat Better America

Garlic Mayonnaise

1/4 cup fat-free or reduced-fat mayonnaise
1 teaspoon lemon juice
1/2 teaspoon finely chopped garlic

Burgers

1 lb ground turkey breast
1/4 cup quick-cooking oats
1 tablespoon reduced-sodium soy sauce
1 teaspoon salt-free seasoning blend
1 small onion, finely chopped (1/4 cup)
1 egg white
4 whole wheat burger buns, split
4 lettuce leaves
4 tomato slices

1. Heat gas or charcoal grill. In small bowl, mix mayonnaise, lemon juice and garlic. Cover; refrigerate until serving time.
2. In large bowl, stir turkey, oats, soy sauce, seasoning blend, onion and egg white until well mixed. Shape mixture into 4 patties, about 3/4 inch thick.
3. Place patties on grill. Cook uncovered over medium heat about 15 minutes, turning once, until thermometer inserted in center of patty reads 165°F.
4. Spread 1 tablespoon mayonnaise on bottom of each bun. Place burgers over mayonnaise; top with lettuce, tomatoes and top of buns.

Very good! Didn't miss the hamburger at all. The wheat bun was very good. I think the bun makes all the difference. I toasted it. Lots of flavor. And, if you're not scared of tomatoes like I am, you can add a slice.
