Oatmeal Toffee Cookies



Recipe from Cooking Light

3/4 cup flour
1 cup oats
1/2 tsp baking soda
1/4 tsp salt
3/4 cup packed brown sugar
1/4 cup butter, softened
1 tsp vanilla
1 large egg
1/3 cup almond toffee bits
cooking spray

Preheat oven to 350. Combine flour, oats, soda & salt in medium bowl, set aside. Combine sugar & butter & mix until well blended. Add vanilla & egg; beat well. Add flour mixture; beat until just combined. Stir in toffee bits.

Drop dough by tablespoonfuls 2 inches apart on 2 baking sheets coated with cooking spray. Bake at 350 for 11 mins., or until lightly browned. Cool on pans for 1 min. Cool on wire racks. Yield: 2 dozen.
