Vegetable Stuffing Chicken



Recipe: Winder Farms

This is a good casserole-type dish. Comfort food. I will make it again. This is half the recipe.

1 (6 oz) package stuffing mix for chicken
1 cup hot water
4 boneless, skinless chicken breasts, cut into 1" pieces
1 can cream of chicken soup
1/3 cup sour cream
1 1/4 cup cheddar cheese, shredded
1/2 cup chopped onion
1 cup carrots, sliced thinly
1 cup celery, sliced thinly

Preheat oven to 350 degrees. Sprinkle 3/4 cup of dry stuffing mix evenly on bottom of 9 X 13 pan; set aside. Add hot water to remaining stuffing mix, stir until moistened; set aside.

Place chicken over dry stuffing mix in pan. Mix soup, sour cream, cheese and vegetables; spoon over chicken. Top with prepared stuffing.

Cover and bake for 45 minutes at 350 degrees. Uncover and bake another 15 minutes.
