New Mexican Stacked Enchiladas
These were very delicious! I used the mini white corn tortillas and they worked perfectly. Even with 3 mini tortillas stacked, it was a lot of food. The egg on top was really good. Mike loved it, but he is partial to eggs. I added ground beef. I will make again.

12 corn tortillas
2 cups cheddar cheese, shredded
2 cans enchilada sauce
1 cup onion, chopped
4 fried eggs
oil for frying tortillas
Put 1 inch of oil in small skillet. Fry tortillas a few seconds until limp. Place on paper towels to drain. Dip a tortilla in sauce and place on plate. Sprinkle on some grated cheese and onion. Repeat for two more layers. Makes 4 stacks. Pour on any remaining sauce and sprinkle on remaining cheese and onions. Top each stack with a fried egg. Can add meat or lettuce too. Each enchilada is assembled stove top on it’s own plate.
