Best Ever Waffles with Vanilla Syrup
Very good waffles. Very light and fluffy. Best ever? Probably not, but pretty close. They still don't trump King Waffle. My sister can vouch for this. But, another great waffle recipe for my collection. The vanilla syrup is really good too. A thin syrup that's a cinch to make. I grew up with homemade syrup, so I prefer this to the much thicker overpowering store-bought syrup.
Recipe: Better Homes & Garden Cookbook
1 3/4 cups all purpose flour
1 TBSP baking powder
1/4 tsp Salt
2 egg yolks
1 3/4 cups milk
1/2 cup oil
2 egg whites
In a medium mixing bowl, stir together flour, baking powder, and salt. Make a well in the center. In another bowl beat egg yolks slightly. Stir in milk and oil. Add egg yolk mixture all at once to the dry mixture. Stir just till moistened (should be lumpy).
In a small bowl beat egg whites until stiff peaks form (tips stand straight up). Gently fold egg whites into flour and egg yolk mixture, leaving a few fluffs of egg white, DO NOT OVER MIX.
Vanilla Syrup
2 cups sugar
1 ¼ cup water
capful + vanilla extract
