2 cups diced chicken (I used a rotisserie chicken)
1 cup diced celery
1/2 cup diced apple (I used red, but green works too)
1/2 cup sour cream
1 cup mayonnaise
2 TBSP lemon juice
salt & freshly ground black pepper
Mix chicken, celery & apple in a medium bowl. In another small bowl mix the sour cream, mayonnaise, lemon juice & salt & pepper together. Pour mayonnaise mixture over chicken mixture. Mix well.
I like to eat this on toasted wheat bread.
